Vegan Salted Caramel Frosting

Mmmhm good. I’ve been practicing for the perfect Vegan Salted Caramel Frosting for the longest time but I could never get it quite right. It always ended up being, well, just… How do I say? Not vegan.

 

Thank God for Trader Joe’s and their magnificent vegan cream cheese. It makes all the difference in the world to cut dairy out of my life {I’m lactose intolerant} and to come across a good vegan cream cheese product is not easy. There are some things in life that are hard to come by and this is one of them.

 

 

Now that I am a complete TJ—Trader convert, I have access to vegan mozzarella cheese and a vegan cream cheese whenever the heck I want! Isn’t that amazing? They even have the most amazing vegan shredded cheese mix. We have secretly fed our family vegan “dairy” products. It’s hysterical because it tastes exactly the same but it’s good for you. Ironic and strange, I know. We love it. And they love it. And they don’t know so don’t tell them.

 

 

Back to the Vegan Salted Caramel Frosting business…

 

In order to come up with the perfect Honey Berries Eton Mess Cake for my brother and sister-in-law’s birthday, I had to come up with a decadent cake frosting to complement birthday cake. I grabbed a little bit of this and a little bit of that, sprinkled some pixie dust over it and hit the button on the mixer. BAM! Instantly fresh and healthy and delicious and drool-worthy Vegan Salted Caramel Frosting.

A little bit of this and a little bit of that, sprinkled some pixie dust over it and hit the button on the mixer. BAM! Instantly fresh and healthy and delicious and drool-worthy Vegan Salted Caramel Frosting.

 

 

Prep time:  2 mins

Cook time:  3 mins

Total time:  5 mins

Yields: 16 oz

 

 

 

 

 

Ingredients

 

Instructions

  1. Using a stand up mixer or hand mixer, beat all ingredients until fluffy and airy.

  2. Frost cakes, cupcakes, or eat by the spoon.

  3. Refrigerate in a glass container with an air-tight lid.

 

Notes

  • Lasts up to a week in the refrigerator.
