Although my time in Hawaii I was very lonesome, I have great memories of the time I spent there working and exploring. I want to have the idea of creating the salad, I wanted to encompass the good memories of having traveled through all of the islands in Hawaii and without the taste of loneliness I felt while being there. It’s crazy to me to think that exactly a year ago today I was embarking on a journey of finding myself while out at sea working in Hawaii.
It’s absolutely crazy to say the least that one can have good memories at the same time as having bad ones. I have the roughest days of my life while out at sea for work, especially those weeks I spent in Hawaii. I struggled to get by without Marylex and Bentley by my side each day. It was hard! I cried a lot. The loneliest of any of my days were spent during the times I have traveled for work.
Working all over the world takes you to see some beautiful places has to leave you with some good memories, yet; doing work abroad or just outside of your town is not easy to do alone. I have one good thing that kept me going while in Hawaii: knowing I can come home and eat this salad with my honey to savor the delicious flavors that encompass Aloha.
The Aloha Salad

Prepare your caramelized macadamia nuts following my Caramelized Nuts recipe.
Cut up your veggies and fruit.
Fill a large bowl with your fresh kale. Top with peppers, onion, pineapple, and coconut.
Cook chicken breast until lightly browned. Allow to cool. Chop up.
Dice turkey bacon. Cook in a pan with no oil.
Remove nuts from oven.
Whisk together ingredients for dressing in a measuring cup.
Top salad with chicken, bacon, and caramelized macadamias. Drizzle dressing. Toss thoroughly.
