Today I decided to bring you some much needed inspiralization with Thai Noodle Tacos. This simple dish was easy to put together with ingredients I already had laying around the kitchen and pantry.
In the last few weeks, I have been getting tons of inspiration from Ali Maffucci from @inspiralized. She has changed the way she eats ever since the spiralizer came into her life. I can totally see her growing this into a full time business. Cookbooks on the horizon?
Before Ali made her online presence, I learned about the spiralizer through a few other avenues on Instagram. I had to see what the fuss was all about so I bought one on Amazon. That was the absolute best decision ever! I have been making veggie spirals galore ever since.
Thai Noodle Tacos
This simple dish of Thai Noodle Tacos was easy to put together with ingredients I already had laying around the kitchen and pantry.

Cook time: 30 mins
Total time: 45 mins
For the dressing
For the noodles
In a small bowl, whisk together peanut dressing.
Cut the bottom bulb off the butternut squash (save it for the next recipe I have coming for you all). Spiralize squash.
Lightly grease large pot with olive oil. Sauté your noodles until wilted. Toss the noodles in the dressing while still in the pot.
Serve with corn tortillas. Garnish with sesame seeds.
