Sunshine Lettuce Wraps

Here is the second post I promised you all today. These Sunshine Lettuce Wraps sure have a lot of color and jam packed with good flavors. This was an inspiration from a pin I posted to one of my boards many months ago. The picture was of a mixed greens, orange, chicken salad on a flour tortilla. I had it on this board for a long time because I knew I could come up with something 10,689,452 times better! That is how I came up with the Sunshine Lettuce Wraps.

 

 

I cut up all the veggies and fruit to mix with the shredded chicken. Delicious butter lettuce leaves topped with oranges, pineapple, chives, shallots, celery, shredded chicken and a homemade honey-lime vinaigrette. All the flavors come together so well. It is a perfect tropical feast while sitting out by the lake and kicking it with the family. Pass around a platter of lettuce leaves and a bowl of Sunshine Salad to fill up your belly with good and nutritious, wholesome foods your body so much desires!

 

I originally made my honey-lime vinaigrette for the BLT Salad I made a few days ago and posted all the deets about. As easy as 1-2-3, you can carry this salad to work or out to play or even for the kids in two Tupperware containers: one for your lettuce leaves and one for your Sunshine Salad.

Sunshine Lettuce Wraps

 

When you mix these flavors with the tropical goodness of oranges, pineapple and other veggies, you are just ready to be mind blown by these Sunshine Lettuce Wraps.

 

 

 

 

Prep time: 5 mins

Cook time: 20 mins

Total time: 25 mins

Serves: 4

 

 

 

 

Ingredients

 

Tropical Honey Lime Vinaigrette

 

Sunshine Salad

  • 2 chicken breasts, shredded

  • 2 oranges, peeled + segmented

  • 1 shallot, diced

  • 1 stalk of celery, sliced

  • 1 cup of pineapple, chopped

  • Handful of chives, roughly chopped

  • Butter lettuce leaves

 

Instructions

  1. Boil water in a pot. When bubbling, add chicken. Boil for 6 minutes. Drain of water. While running a cold bath of water, shred chicken. Dry of excess water with paper towel. Set aside.

  2. Prepare fruits and vegetables. In a large bowl, add fruit, veggies, and chicken. Toss well.

  3. In a small bowl, whisk together ingredients for dressing. Pour over bowl of Sunshine Salad and toss to coat evenly.

  4. Serve butter lettuce leaves on a plate and the salad in a bowl to serve yourself.
