Sugar + Spice Sweet Potatoes

Happy anniversary, baby bear! This is our candy anniversary; six whole years! I mean, that’s 72 months, 313 weeks, 2191 days, 52,594 hours, 3.156 million minutes of our love still ticking. Anyone who knows us well knows just about how much we have been through together. It’s incredible to see God really has chosen a soulmate for me, for her, for us. I can see the work He does in our lives and how He has restored so many broken parts of ourselves that He could not mend if we were apart. These Sugar + Spice Sweet Potatoes are for you, my sweet pea.

 

We have grown so much in six years. There’s only more to come. It’s funny because this morning we received a text message from my parents wishing us a happy anniversary, which would have been unusual many years ago, and wishing us an amazing 94 more years to go. We laughed, yes out loud, because we totally believe that God can bestow a miracle like that upon us. I think we will actually be able to live to 100 together and see the fruit of his love in our lives that many years later. I vow to love only her forever.

 

 

Today, our only duty is to pack up the car with all of the stuff we need for The Legendary Road Trip. We had out tomorrow in the early morning. Time really does fly! Who would know that this would come so quickly? Just the other day the two of us were sitting down preparing for a blog post with the rough draft of our stops along the way. So quickly after that we were finalizing the official list of landmarks we were headed off to. It’s crazy to think we take off tomorrow and know that our lives will change forevermore. I’ll leave you with a nice little recipe and I’ll post something tomorrow. I’m off to catch some zzz’s!

Sugar + Spice Sweet Potatoes

 

 

A nice and healthy dish to serve as a side to any meal or at a holiday feast. These Sugar + Spice Sweet Potatoes are sure to be a hit!

 

 

Prep time: 10 mins

Cook time: 20 mins

Total time: 30 mins

Serves: 8-10

 

 

 

 

Ingredients

 

Instructions

  1. Place a large pot of water to boil.

  2. Peel and dice sweet potatoes.

  3. Once the water is boiling, throw in sweet potato chunks. Boil for 15-20 minutes. Remove from heat. Drain through a colander. Set aside.

  4. In a small glass bowl, mix together oil, jam, seasoning and maple syrup. Set aside.

  5. Mix sweet potatoes and sauce in a large mixing bowl. Allow to cool for a few minutes.

  6. Serve.
