I think I gave you a hint up there that might have just given it ALL away, huh? Well, today's post—or second post for that matter—features a nice summer salad for the mom on the go or the kid on the run or the dad in a jiffy or a person with a goal. Aside from my sappy recovery story that is nothing short of a blessing, I've come to share more thoughts that I have had during my recent travels, conference attending or interpreting, I have come to the point where I want to enjoy the little things in life and not take anything for granted because God only gives us this one chance. What are you going to do with your one opportunity at life?
When I am home from my travels, I notice the things that are peculiar and strange. The things that nobody notices until they are back home suddenly strikes you and gives you peace, even comfort. Things like Marylex leaving a spoon or even a fork in the pantry next to the peanut butter jar for quick random snacking. Random events such as Bentley sleeping with his paw covering his forehead. Even stuff like them keeping everything meticulous for me to not have a super OCD moment. I don't just notice these things but begin to appreciate them for what they are. God blesses me abundantly and I have to notice Him in the little things. He's in each stitch of life and each breath.
I know I've been emotional lately but I have actually been on track with all my hormones and bodily functions which is out of the ordinary so I guess I am feeling what I am usually supposed to be feeling. It feels good! My health has never been better. Either way, the rollercoaster of emotions might also be all over the place being that I am in and out of town ever so often these days. I am actually leaving again in about a week or two on another cruise interpreting adventure with my friend/mentor Carol. It's a short 5 day one but still... I will be keeping all these memories bottled up in my heart while I am gone. Also, this time my automatic posts WILL be working, so don't fret.
Onto the summer sweet freshness of this Strawberry Fields Salad! This has been all the rage during the month of July. Just because it has been all the rage doesn't mean that it is actually healthy. So as always, I took it upon myself to revamp the infamous Strawberry Fields Salad for all those, like myself, who would much rather not have a pound of sugar in their salad. Wendy's and every other fast food restaurant out their with unhealthy salads can forget all about it, this is the all-new rage! Quick and easy, you can be done with this salad faster than going through the drive through.
Strawberry Fields Salad
Are you in for a fresh + healthy summer treat? This Strawberry Fields Salad is sure to beat the heat! Easy to put together + quick to put down.
Prep time: 10 mins
Cook time: 10 mins
Total time: 20 mins
2 cups spinach
2 cups strawberries, sliced
¼ cup crumbled feta cheese
¼ cup sliced almonds
¼ onion, spiralized
Handful of chives, roughly chopped
1 avocado, diced
Chop up veggies and fruit. Spiralize onion.
Juice lemon into a small bowl and set aside. Whisk together remaining dressing ingredients in a glass bowl. Microwave the dressing for 30 seconds (this will marry the flavors together). Add lemon juice to the dressing and whisk together.
In a Tupperware bowl, add spinach, veggies, fruit and cheese. Drizzle dressing over salad. Seal with lid. Shake until evenly distributed.
Serve in bowls.
