Sports Night Chicken

Super Bowl weekend!

 

I’m not a fan of sports, like I have said before on the blog. But I sure as hell love throwing a party for whatever the reason and cooking for whoever comes over. Tonight, Sports Night Chicken is all the rage.

 

 

My honey has been making Sports Night Chicken once a week for dinner for the last few weeks and we just love it. It’s got the perfect amount of spice and tang with lots of garlic, which we are obsessed with. Sports Night Chicken is healthy, clean and scrumptious.

 

Miami

 

I’m excited because I’ll be making a trip on my own to visit family in Miami soon. I went to Dollar Tree and bought one of those large Santa Claus style Christmas bags. I have packed it all up with the gifts for the family to easily maneuver on my own. I love Christmas! This gets me giddy that I get to have a redo for Christmas with the family. Sad that my wife cannot join me, but; she has to stay behind and work.

 

While I am in Miami, I am going to try and spend quality time with me, within myself. Listen to good music, workout outside in different parks, and pray. Pray a lot. And then, run back home to my pretty lady and my sonny.

 

Super Bowl

Sports Night Chicken

 

Sports Night Chicken is clean and scrumptious. With the perfect amount of spice from the jalapeños and lots of garlic, your game day is sure to be amazing.

 

 

Prep time:  2 mins

Cook time:  45 mins

Total time:  47 mins

Serves: 4

 

 

 

 

 

Ingredients

 

Instructions

  1. Preheat oven to 425° F.

  2. Slice jalapeños.

  3. In a small glass bowl, add butter and garlic. Heat in the microwave for 30 seconds.

  4. Spray large pan with coconut oil.

  5. Add sea salt to one side of the chicken thighs. Flip and season. Cover with thinly sliced peppers. Drizzle with garlic butter.

  6. Bake for 45 minutes.

  7. Remove from oven. Allow to cool.

  8. Serve with French fries.
