Spending time with Nohely was such a great experience. I never thought I would be able to create such a beautiful bond with her. I hadn’t always been this close to her. Sometimes, I would think to myself that I would not be able to connect with her because I missed out on getting this close to her for some of her years. Life is like that. It throws you lemons and you make lemonade. In this case, we made a healthy dressing for our wonderful Southwestern Salad.
I loved a book named “Make Lemonade” growing up. I still love it. I have probably read it about a thousand hundred times. Who knows? I have it in my night stand. I’ve traveled with it everywhere. It has taught me a lot about life. SO many things in life can go wrong, but; it’s up to us to make that damn lemonade when lemons smack you upside the head.
I will be honest though, I don’t always make lemonade when the shit hits the fan. Sometimes, I just go ballistic because who doesn’t like to be a frantic maniac? Obviously, I gotta get it together when the times get rough. I depend on God to hold me up in moments like that. I guess I kinda pray to Him asking if He can please make me a pitcher of lemonade for me. I’m a bit too dependent on Him.
Is that a bad thing? I don't think so. He is everything. Truth be told, there’s a lot of things we will never know until we ask and many things we won’t ask because we know too much. Southwestern Salad, anyone?
A trip to Mexico in your salad bowl! Kick it up a notch this Summer with this Southwestern Salad topped with Spicy Taco Vinaigrette.

Spicy Taco Vinaigrette
Cut up your veggies.
Fill a large bowl with your fresh spinach. Top with tomatoes, onion, avocado and corn.
Grill chicken breast until lightly blackened. Allow to cool. Chop up.
Whisk together ingredients for chosen dressing in a measuring cup.
Top salad with chicken. Drizzle dressing. Toss thoroughly.
