Simple Caprese Salad

Without further ado, I will finally begin getting around to all the stories I have to tell. Unfortunately, it’s been a long time since I provided consistency to my blog, chefNia*. I am happy that I’ve found a new outlet to express myself without any HTML and CSS problems. Thank God, I brought Simple Caprese Salad with me to cure the blog hiatus woes.

 


To be honest, I was SO sad to have to let go of something I put so much heart & soul into but I don’t have to let go completely. I am giving it another breath of fresh air and life. This has another shine of light from a part of me I didn’t even know was in me.

 

There was so much for me to share and so much on my chest. I told myself that I couldn’t make up lost time. I was convinced that this was the end of an era. I believed it was over for chefNia*. Now that God smacked me upside the head (LOL) and told me I was being crazy and irrational. This is a new chapter, not the end. This is the transition into a new era for me. I am releasing a part of me I had never shared.

 

 

This is me! Oh, and here’s a salad. An Italian favorite converted to a supreme salad; from the pesto dressing to the fresh mozzarella, the Simple Caprese Salad will fill your every craving.

Simple Caprese Salad

 

An Italian favorite converted to a supreme salad; from the pesto dressing to the fresh mozzarella, the Simple Caprese Salad will fill your every craving.

 

 

Prep time: 5 mins

Cook time: 5 mins

Total time: 10 mins

Serves: 2-4

 

 

 

 

Ingredients

 

Pesto Dressing

 

Salad

  • 1 avocado, diced

  • 2 tbsp pine nuts, toasted

  • ½ cup cherry tomatoes

  • ½ cup mozzarella cheese

  • 1 bag fresh spinach

  • 1 cup quinoa, cooked

 

Instructions

  1. Cut avocado.

  2. Toast pine nuts.

  3. Fill a large bowl with your fresh spinach. Top with tomatoes, mozzarella, pine nuts and avocado.

  4. Cook quinoa. Allow to cool.

  5. Pulse ingredients for dressing in food processor until combined. (It will be clumpy)

  6. Top salad with quinoa and dressing. Toss thoroughly.

  7. Serve.
