Hold onto the thought of Savory Bacon Jam till the story is over, please. As we drove through the Great Plains to get to Kansas, my anxiety grew within. If you haven't read my blog before, I have spoken relatively to the fact that I struggle with anxiety. So when I say anxiety, I mean anxiety. I've been obsessed with The Wizard of Oz for the longest time, possibly since childhood. I watched it over and over. I memorized the songs and danced around hoping that one day I could follow the yellow brick road. Who knew that it actually existed? Well, it does!
Once we got there to Liberal, Kansas, it was exactly what I imagined it would be. From the yellow brick road to the wonderful music song by the munchkins, the gift store, the replica of Dorothy's house, oh! and even the land of Oz, everything was perfect! We took 1000 pictures, if not more as we walked through the property with the museum tour. Our tour led by Dorothy herself! Well, in actuality it was a young girl dressed in a Dorothy costume; I will leave the mystery two children from all over the world that come to this hidden gem.
FYI, for those of you reading all of my stories about The Legendary Road Trip and curious about what we've been doing with the boy, our precious Weimaraner, we literally taking him everywhere! He even came on the tour with us through the Dorothy House & Land of Oz. He didn't bark even once. He's only tempted to lick everybody and their mother, but that's normal. If they let him, by all means he is more than allowed to show people some love. Who would know that a sweet boy like him could bring so much love and joy to, not only our lives, the lives of others? When we first chose him, we had no idea what we were getting ourselves into.

He's definitely our son, all the way around. This carries the same responsibilities as a parent, which we are now. I kind of like when people call us dog moms, yet; I hate it at the same time because I feel like I'm more than a dog mom. Our entire life is based on him, as is The Legendary Road Trip. At the moment, we are just about to pass the memorial library. This is the famous library that is shaped like an open book. I can't wait to see you and I can't wait to head out to our next destination. I will keep you all posted, as usual, as we make our way up to Colorado this evening. Tootles!
Savory Bacon Jam
Finally, a Savory Bacon Jam that all can enjoy slathered on anything. Keep it in a mason jar in the fridge or give it away as a gift.
Prep time: 10 mins
Cook time: 1 hour
Total time: 1 hr 10 mins
Yields: 8-10 oz
Throw all your ingredients into the food processor. Pulse until crumbly, not creamy.
Add jam mixture to a medium sized pot. Do not add oil, the bacon will produce it's own fat. Cover with a lid. Boil on medium high for 15 minutes without uncovering.
Remove lid. Stir for 5-10 minutes. Lower heat. Cover again. Boil for another 10-15 minutes. Remove from heat. Allow to cool with no lid.
Pour into a mason jar, or several as gifts.
Refrigerate for use.
