Rum Punch Infused Watermelon Bites

Tomorrow is my wife's birthday so that meant a boat party with the entire family and Rum Punch Infused Watermelon Bites for the adults on-the-go! It's going to be the pineapple/flamingo bash of the year because she is turning 25! Woohoo!

 

 

My sister-in-law is tackling a gluten-free cake in the shape of a pineapple and I am in charge of bringing the boat to life with inexpensive decor. From my Pineapple Tissue Paper Garland to some Hawaiian lei necklaces for everyone, this is going to be so much fun! Of course, I couldn't go wrong with these incredibly sweet and potent Rum Punch Infused Watermelon Bites.

 

 

The best part about these is how easy they were to put together! Using my melon baller, I scooped out some fresh watermelon bites and then infused them with a quick rum and OJ concoction. I am telling you that these adorable little edible cocktails are just perfect for a summer beach or pool bash.

 

 

To make these Rum Punch Infused Watermelon Bites easier to eat on the boat ride through Fort Myers, I used some adorable yellow and hot pink paper straws I had snagged at the dollar section of Target ages ago. They were just perfect for the whole pineapple/flamingo theme I am putting together featuring sweet little lady bugs. If you cannot find paper straws that match your theme, cocktail picks or disposable toothpicks work just fine! Play around with what you have and make these your own.

Rum Punch Infused Watermelon Bites

Prep time: 10 mins

Cook time: 35 mins

Total time: 45 mins

Serves: 10-20

 

 

 

 

 

 

 

Materials

 

Ingredients

  • ½ watermelon

  • ¼ cup watermelon juice

  • 8 oz orange juice

  • 1 lime, juiced

  • 1 oz Havana Club rum

  • 2 tbsp raw honey

 

Instructions

  1. Using a melon baller, make as many watermelon bites as possible.

  2. In a mason jar with a blender ball, add rum punch ingredients. Seal with lid. Shake to combine.

  3. Add watermelon bites to a medium sized tupperware container. Pour rum punch over the fruit until covered completely.

  4. Refrigerate for 2 hours.

  5. Remove from fridge.

  6. Serve on paper straws cut in half or cocktail picks.
