Rainbow Summer Salad

There are times for everything and there is a time for this salad before the summer is over. We get enough watermelon in the summer and pomegranate seeds in the fall. Why do people forget to ever mix two and two together? I guess I just needed to be the one to break the ice and share this delicious Rainbow Summer Salad with you all. I’m going to be quite honest here, there are many times where there are barely things in the fridge as we await to go to the grocery store. I am sure just about every American family has days like these. When this comes up, I always have something crazy yet delicious up my sleeve. On days like those, I grab everything in the fridge and make a yummy salad. This Rainbow Summer Salad right here is just that.



None of those meals have ever been documented. Although almost everything we cook is delicious (DUH), for the exception of some things that get burned in the kitchen or just simply go wrong, not everything is photographed and posted up to the blog. I would hope that everyone who reads this assumes so, as we also don’t have time to document each and every single one of our meals in order to share them with you, as much as we would like to. I am so happy that this Rainbow Summer Salad turned out just like it did and that I was able to capture some photos of it.


Also, I am grateful that our cousin Cathy was over the house for the summer because she really assisted me in writing down recipes as I cooked them. When Marylex is not available to assist me, I tend to forget the recipe or write it down incorrectly. I don’t always test my recipes more than once, for the exception of the recipes in my e-book. With Cathy here, I was able to cook in the kitchen and have her jot down notes and also help me take pictures. (She has very pretty hands). Of course, I have to take advantage of pretty hands and put them all over the blog holding my food. HA!




Rainbow Summer Salad


A rainbow of colors in this spiralized Rainbow Summer Salad to freshen you up after a long day in the incredible scorching summer heat.





Prep time: 10 mins

Cook time: 10 mins

Total time: 20 mins

Serves: 4






  • 4 zucchini, spiralized

  • 1 tomato, diced

  • 1 yellow pepper, diced

  • 1 orange pepper, diced

  • 1 cup blueberries

  • Handful of chives, chopped

  • ¼ cup of mozzarella pearls

  • 1 tbsp FlavorGod "Honey BBQ" seasoning

  • 2 tbsp raw honey

  • 2 tbsp olive oil

  • 6 slices turkey bacon, crumbled

  • Sea salt, to taste



  1. Spiralize and chop up veggies.

  2. In a large bowl, mix together veggies, herbs, fruit & cheese. Set aside.

  3. In a small bowl, whisk together seasoning, honey & oil. Add dressing to salad. Mix together until evenly coated. Cover bowl. Refrigerate.

  4. Microwave bacon until crispy. Allow to cool.

  5. Remove salad from fridge. Crumble bacon on top. Mix together. Add sea salt.

  6. Serve.
