She is on her way home!!! Thank God. I can only spend so much time here with just Bentley while he bugs me and I work. I get to munch on this Rainbow Quinoa Salad now all by myself while I wait though which is a plus to it all!
To be quite honest though, I have thoroughly enjoyed this time alone to get things done! I cleaned the house twice yesterday and once today (different parts—big house); I even cleaned outside. I filled SO many interpreting requests. I am feeling ever so grateful to God for the blessing of this agency. He allows me to connect with people on a daily basis doing what I love and have a passion for. I have also kicked ass at all my workouts and kept my food super on point.
This week I have dedicated lots of time to recipe testing and have several to be shared over the next few days while I am in town and even on the days I won’t be in town. Just too much stuff up my sleeve this month and I guess the summer is the one to blame.

Rainbow Quinoa Salad
Easy peasy and lemon squeezy! This Rainbow Quinoa Salad will sure hit the spot on these hot summer days.

Cook time: 30 mins
Total time: 35 mins
2 cups quinoa
1 can chickpeas
1 yellow pepper, diced
1 red onion, diced
Handful of edamame, peeled
3 chives, roughly chopped
¼ cup dried cranberries, unsweetened
¼ cup sliced almonds
Make a batch of quinoa and separate two cups.Chop and peel veggies. Set aside.
Juice oranges into a small bowl. Whisk together dressing ingredients until combined.
Combine quinoa, veggies and dressing. Mix well.
