Rainbow Fruit Skewers

March 14, 2016

Happy Sunday!

You know I love all things festive and this week is St. Patrick’s Day. We hung up some lucky four leaf clover garland, bought the cutest floral arrangement made of eucalyptus and other gorgeous greens, made the most adorable wreath for the front door and we basically have the house all covered in everything green. I made these cute Rainbow Fruit Skewers to get a little taste of the rainbow on a search for my own pot of gold this year. A lot of the St. Patrick’s Day food ideas on Pinterest include Skittles or M&M’s. Ehhh, since we don’t need that kind of stuff, we thought we would come up with a fun and sweet treat. Rainbow Fruit Skewers were sure to not be beat.

What are you doing for the holiday? I’m throwing a little gathering at our house for St. Patrick’s Day. I know it lands on a Thursday but we are going to try and make it happen. We are, also, hoping that our cousin Cathy can make it up here to join us. We’ve been trying to plan it out around our schedules. She’s young but ambitious. She started working with Titi Lisa and Tío Hernel. They have their own company so with the income she made, she bought herself a nice little car. We are just so proud of her and can’t wait for her first road trip alone to come visit! I plan on making these Rainbow Fruit Skewers again once she is here.

Kids enjoy making things that are full of bright colors and have fun with neat activities. Rainbow Fruit Skewers are the perfect treat to make with your littles for St. Patrick’s Day. If your kids are old enough, you can even use this activity to teach basic instruction on how to use a knife to cut fruit. I mean, how cool is that? If they are too little, don’t fret just cut the fruits yourself and let them fill up the bamboo sticks. I chose a selection of different fruits we like but you can customize them with fruits of your choice for the cutest Rainbow Fruit Skewers, ever.

Have you made any other lucky St. Patrick’s Day treats this year? Please do share them with us. Stay tuned for a few more holiday posts. Have a blessed day, guys!

Rainbow Fruit Skewers

Rainbow Fruit Skewers are the perfect treat to make with for St. Patrick's Day. A little bit of this and a little bit of that makes a great, healthy snack.

Prep time:  10 mins

Cook time:  20 mins

Total time:  30 mins

Serves: 20-40

  • 1 cup raspberries

  • 4 oranges, segmented

  • 1 cup pineapple, chopped

  • 6 kiwis, peeled + diced

  • ½ cup blueberries

  • ¾ cup grapes

  1. Fill a deep dish with water. Submerge bamboo sticks. Allow to sit for 10 minutes.

  2. Wash, peel, cut your fruit. Arrange skewers with all the colors of the rainbow.

  3. Serve on a plain white dish to make the colors pop.

  • Soaking the bamboo sticks make it easier to remove fruit later and avoid splinters.
