Nothing says November like pumpkin spice does! This is my absolute favorite time of the year. Halloween gets me all pumped because it begins to transition us into fall, which is secretly my favorite season. I will admit later this year how much I love winter but as fall approaches, the butterflies just grow in my stomach with eager excitement of anticipation. I just love the fall! I love the falling leaves, the changing of colors, the breeze in the air, and the acorns on my feet.
The acorns do get pretty annoying, though I accept them in retribution for the enjoyment I receive from the holidays. Something smells different in the air when it’s November and I’ve come to believe that it must be the pumpkin spice.

Pumpkin Spice Loaf

Cook time: 1 hour
Total time: 1 hour 10 mins
Preheat the oven to 375° F.
Chop up zucchini. Pulse in the food processor until a creamy paste.
Toss all ingredients into large mixing bowl. Whisk until fully combined.
Spray loaf pan with oil. Pour in batter. Sprinkle with toppings.
Bake for 45-60 minutes.
Remove from oven. Allow to cool overnight.
