Moving on… I’m having a lot of back pain these days. It really sucks because we’re headed out across the country in our car! This means I really can’t afford to be in pain in my lower back. Sitting in the car for hours upon hours can cause even more pain. I’ve been using some of my Essential Oil Pain Salve. I guess I could say it’s a little better but it seems to be a muscle. Contrary to popular belief, I may go for a run later today in the hopes it will relieve the pain.
I’ve tried yoga, which I love to practice. Most times, this helps me a lot. Another big help in the pain relief department is inversion therapy. We bought an inverter a few years ago due to the pain I suffer with. It’s unfortunate that my pain has to come to this; however, the inverter has definitely played a big part in our lives in the last few years. You could definitely say that my back pain is chronic. With that being said, my typical go-to idea when I have back pain is to just jump safely get onto the inverter and save the day. This time around, I think the inverter did more damage than good. I’m surprised, too. I never expected the inverter to hurt me more than the original pain I had.
Maybe I got on it wrong… Or maybe I didn’t stretch out well? Who knows! I’m just praying that with stretching, yoga, essential oils and exercise I will be ready to go next week on August 10th. I believe and trust in God and the power of His healing. A lot of times before traveling, back pain arises. I think it could possibly be linked to stress that comes from the travel departure countdown. This is one Legendary Road Trip and a whole month of traveling could certainly bring a lot of stress.
In lieu of stress relief, I bring to you, Personal Pizza Pies. Let me tell you that pizza has become popular demand at the Lopez-Sarraff residence. However, pizzas can possibly come, I am serving them up here at home. We’ve invited family and friends on several locations to make pizza. Since one slice two slices is not enough to quench the desire, I came up with Personal Pizza Pies. It’s the perfect way to have pizza and not share, all at the same time! Personal Pizza Pies
Ever thought of taking a whole personal to the face? Make these Personal Pizza Pies.
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Pulse crust ingredients in food processor.
Spray pizza pies with coconut oil. Divide dough in half. Spread out crust dough onto pan. Using a spatula, push it all the way to the edges evenly.
Bake for 15-20 minutes.
Crumble sausage into small bits. Chop pineapple. Set aside.
Remove pizza crust from the oven.
Spread marinara sauce on your crust. Leave a little bit of crust without sauce around the edges for that crunchy bite!
Add ham, sausage and pineapple. Top with mozzarella pearls. Sprinkle seasoning over pizza.
Bake for 10-15 minutes.
Remove pizza pies from oven. Allow to cool.
Using pizza cutter, cut each pie into four mini slices.
