Ahhh…the good old trusted and true Onceler Cake REINVENTED!
This is one of my very first recipes after going to cold turkey off of sugar and flour. I was learning to cook with new ingredients I started incorporating ingredients such as coconut flour and coconut sugar. I wanted something that would taste just as sweet as a chocolate cake that I used to go pick up at Winn-Dixie and eat to the face. Since I wasn’t going to stop by the supermarket to pick up an entire chocolate cake, I thought I would make my own mug cake that would satisfy the craving and serve just one. Chocolate cake, of course.
At the time, my wife and I were still dating and we were not even engaged yet. She lived with her brother in North Miami Beach and I lived about an hour away headed south. Since I was only cooking for one, I worked my way into the perfect recipe which I named after one of the characters in the movie the Lorax. I dubbed it the Onceler Cake. I was super obsessed with the Lorax around this chapter of my life so this was the perfect name for the perfectly sweet treat I came up with.
Speaking of, I just popped the disc into the Blu-ray player so that I can hear it playing in the background as I type this post. I love movies like that, animated and cute with a lot of catchy music that I’ll be singing for weeks on end. My poor family who has to deal with my singing, pray for them.
With all these ingredients readily available right on my kitchen counter or inside of my pantry, I’m set to go when the craving creeps up and I know exactly what to make that hits the spot. Obviously that means I’m making a Onceler Cake—or two because my honey is obsessed with them now. I can only foresee that this will be a tradition long to come here for the rest of the family.

The Onceler Cake: REINVENTED
I have made my own ooey, gooey chocolate mug cake that would satisfy a sweets craving and serve just one. Onceler Cake, of course.
Prep time: 2 mins
Cook time: 3 mins
Total time: 5 mins
Spray mug with oil.
Pour ingredients into a mug. Whisk well.
Microwave for 3 minutes.
Top with Nia Syrup.
