Old-Fashioned Peach Cobbler

I’ve been having a straight marathon of Nashville on Hulu+ for the last few days {wrote this a month in advance}. And nothing goes better with country music than a good Old-Fashioned Peach Cobbler—homemade, of course. Plus, what a better way to celebrate my wife’s birthday TODAY than a dollop of honey infused Greek yogurt on a warm slab of Old-Fashioned Peach Cobbler?!

Since we are currently on the road, we are probably somewhere in Anchorage having the time of our lives. Marylex specifically wanted to spend her birthday here in her favorite city in Alaska. We already spent a week getting to Alaska, two weeks in Fairbanks and now a week here.

 

 

Wayward Pines. Have you seen it? It’s amazing! Super freaking weird but super great. End of the world, taken over by zombies that we basically evolved into type of deal. Kind of gruesome in the first season but it got so much better over time. Season 2 is killing it with some insane insights to the past and future. Not watching it? Start now. Not eating peach cobbler? Make some!

Old-Fashioned Peach Cobbler

 

What a better way to celebrate my wife’s birthday TODAY than a dollop of honey infused Greek yogurt on a warm slab of Old-Fashioned Peach Cobbler?! Happy birthday, baby!

 

 

 

Prep time:  15 mins

Cook time:  45 mins

Total time:  1 hour

Serves:  8-10

 

 

 

 

 

Ingredients

 

Instructions

  1. Preheat oven to 350° F.

  2. Make a batch of Homemade Piecrust. Set aside.

  3. In a microwaveable safe bowl, heat up peaches for 3 minutes. Add coconut sugar and sea salt. Heat up for 3 minutes. Add dough and oatmeal to caramelized peaches. Mix well until combined.

  4. Spray a casserole dish with coconut oil. Pour peach cobbler and flatten.

  5. Bake for 45 minutes.

  6. In a small bowl, whisk together yogurt, honey and vanilla.

  7. Remove from oven. Allow to cool.

  8. Serve with a dollop of yogurt.
