Mushroom Spinach Scramble

I am at day 5 of the fat blast and I couldn't help but check my measurement results. Oh. My. Goodness. I lost 7.5 inches off my body! How amazing! I sent pictures to Sue before starting and now after completing. She notices the difference by just looking. I also sent her the measurements from before and after for accountability. She is awesome and is definitely pushing me to the next level in fitness.

 

 

I am loving all the workout equipment in the living room; it is so motivating for Marylex and I to just see it there and know it is time to put in a workout. I will be adding more to my collection of workout tools and supplies soon but for now this is what I've got…

 

  • 2 jump ropes

  • (6 lb) weighted ball

  • yoga mat

  • 2 basketballs

  • 5 resistance bands

  • balance ball

  • 2 shake weight pro

 

Oh!! And, I can't forget the collection of BlenderBottles we have at home. Yellow, green, orange, purple… You get the picture. I have a million things on my list that I want but I have to keep pushing to get this body where it has to be. I cannot just buy things because I am going through a phase. I have to prove to myself that it is forever and I am back in the loop with my fitness. I also have a million DVDs in rotation that I plan to use to the fullest.

 

I am happy I came across Sue. She may not realize, but she instilled in me a motivation that had once left me. I got it back and I am ready to hit it hard!

Mushroom Spinach Scramble

 

This is the perfect breakfast to get ready for a busy day. Try our Mushroom Spinach Scramble tomorrow morning.

 

 

Prep time: 5 mins

Cook time: 15 mins

Total time: 20 mins

Serves: 2-4

 

 

 

 

 

Ingredients

 

Instructions

  1. Slice mushrooms. Mince garlic.

  2. Lightly grease pan with oil. Sauté mushrooms till browned. Cook spinach till wilted. Add eggs. Add garlic and cayenne.

  3. Serve.
