Mini Caprese Salads

Today, I bring to you these cute Mini Caprese Salads. In an attempt to make prepping my wife’s lunches for work a bit easier, we have turned to mason jars for easier storage and simpler eating. Mini Caprese Salads was one of the very first meals I made for her in small masons. She loves them so much that I have been making them every week for the last two months! Thank God we are taking a 50 day road trip so she won’t get tired of them.

 

 

What kinds of lunches do you take to work? We’re finding that mason jars do well on the go, whether refrigerated, frozen or reheated. It’s definitely something to consider for travel on a road trip. We can carry granola and trail mix and other goodies all in easily accessible mason jars. All different shapes and sizes. Wahoo!!! Gosh, we love to travel the world.

 

 

Unfortunately, this healthy and simple meal is not one that we can take on the road but sure can pack Mini Caprese Salads in your kid’s lunch boxes for school and your loved ones brown paper bag to work.

Mini Caprese Salads

 

To make meal prepping a bit easier, we have turned to mason jars for easier storage and simpler eating with Mini Caprese Salads at the top of the list.

 

 

Prep time:  2 mins

Cook time:  3 mins

Total time:  5 mins

Serves:  8

 

 

 

 

 

Ingredients

  • 8 oz mozzarella cheese, cubed

  • 4 oz basil leaves, roughly chopped

  • 8 oz grape tomatoes

  • ½ tsp garlic powder

  • ¼ cup olive oil

  • Sea salt, to taste

 

Instructions

  1. Cut your cheese into cubes. Roughly chop basil leaves.

  2. Toss all ingredients together in a bowl.

  3. Serve in 4 oz mason jars.

  4. Refrigerate.

 

Notes

  • Cheese used is made with soy and contains no dairy.
