Last night, we had our friends Melissa and Chris over for dinner. We had been planning this for a week or two and I was eager to make them my homemade healthy pizza. When we hung out last, Chris had mentioned how much he loves Meat Lovers Pizza. I thought this was a perfect time to make a Meat Lovers Pizza of my own and have them come try it out.
I spent the whole day putting up the remainder of artwork, photos, and paintings in our living room. Although they’ve been to our house before, I wanted to have all of the frames off the floor. That kind of shit drives me crazy!
When we moved in, the landlord did not have the house painted white as expected. The shade of white all over the house is practically days due to being tarnished over the years. Of course, he expected that we would do the work without any reimbursement. This was the least of our worries upon settling into our new house.
A while back, we had purchased all-in-one white paint (primer + flat white). The two cans of paint kind of sat in our pantry for a bit. While Cathy was here at our house for the summer, we decided to paint the living room. It seemed like an easy task but it sure wasn’t. It took days to get through the living room. We had thought of painting other parts of the house with the leftover paint, but; we got lazy about it after having seen how much work it was to paint over that ugly ass white.
Now that the living room is painted, the only thing left was to put up our photos, artwork and paintings on the wall. I always seem to do this alone because I’m the one with the creative gene. Having collected even more artwork and photos in the last two years, I realized this was a task for two not for one. Cathy assisted me while she was here, and; now that she’s gone, I finished everything off yesterday while Marylex was at work. It came out absolutely spectacular! I am so happy with the way it turned out.
I can definitely foresee ourselves staying here for an extra year in order to continue saving towards the goal of buying the house of our dreams. I know I have been ranting a lot these days about the condition of the home and the troubles we have with our landlord. At the end of the day, the house is not half bad for the price we are paying. It’s an amazing neighborhood and we didn’t have to leave the town that we love: MetroWest. I just want him to be more understanding and flexible with repairs needed to be done. And, for the record, someone has to do the bitching around here! *wink wink*
Meat Lovers Pizza
Meat Lovers Pizza is certainly "the dream" gluten-free pizza with all the works on top. Today's the day to make it come true.
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Preheat oven to 350° F.
Pulse crust ingredients in food processor.
Spray pizza pan with coconut oil. Spread out crust dough onto pan. Using a spatula, push it all the way to the edges evenly.
Bake for 15-20 minutes.
Crumble sausage into small bits. Dice turkey bacon into small squares. Set aside.
Remove pizza crust from the oven.
Spread marinara sauce on your crust. Leave a little bit of crust without sauce around the edges for that crunchy bite!
Add ham, pepperoni, sausage + bacon. Top with mozzarella pearls. Sprinkle seasoning over pizza.
Bake for 10-15 minutes.
Remove pizza from oven. Allow to cool.
Using pizza cutter, cut pizza into eight or more slices.
