Loaded Baked Potato Salad

Today, Cathy and I are at it yet again! In preparation for a very impromptu BBQ by the pool with the family, we decided to make a few sides to go with some delicious burgers. Don’t worry, I will share the recipes for the burgers later. It might surprise you but the burgers are not the star of the show this evening. This Loaded Baked Potato Salad and the BBQ Roasted Veggies that will follow this post are the definite show stoppers for tonight!

 

 

We’re going to be headed to the barbecues nearby the pool area in our community. Typically, we would barbecue right in our own backyard, but; when we moved from our old house, we completely forgot and left our barbecue in the backyard. Once we got to know our condominium community, we decided that the use of the community barbecues was best. Unfortunately, right now we are in the process of having our patio/backyard re-landscaped.

 

It is a straight up hot mess! When they started the project back in March, they had ripped all of the grass, flowers and plants out of the ground. They left it like that for almost a whole month! I was just about ready to die when they finally started working on the common areas of the community.

 

 

Although seeing landscapers work on the daily excited me for what was to come, my hopes were not too high. After seeing the entire community come together with lush greenery and beautiful flowers, my hopes were through the roof. I was yet to find out that there were no plans set in place to re-landscape my patio any time soon… More on that story later.

Loaded Baked Potato Salad

 

Hail all fans of all things bacon! This Loaded Baked Potato Salad is the epitome of the best barbecue salad the world has ever tasted.

 

 

Prep time: 10 mins

Cook time: 20 mins

Total time: 30 mins

Serves: 8-10

 

 

 

 

Ingredients

 

Instructions

  1. Chop/dice potatoes & chives. Set aside chives.

  2. In a large pot, boil water. When bubbling, add potatoes. Cover for 15 minutes. Uncover. Leave boiling for 5 more minutes. Remove from heat. Drain.

  3. Cook bacon. Cut into chunks.

  4. Throw everything in a bowl. Mix together. Refrigerate.

  5. Serve as a BBQ side.
