Happy Mother’s Day!

 

To wish you all a very happy Mother’s Day, I have made the most amazing and decadent Lemon Streusel Tart. On days that I whip up a batch of Homemade Piecrust, I typically stick to making a good pie but today was a day for a perfectly simple Lemon Streusel Tart. It wouldn’t be a perfect Mother’s Day without a delicious fruit tart.

 

 

I have my two of the best Mother’s Day brunch salads cooling in the fridge and a Lemon Streusel Tart baking in the oven. Life could not be any better. I mean, unless we had our moms here. *tear tear *

 

This year, Mother’s Day is just for two. None of our family could make it up to visit and we couldn’t make it down. We are grateful to have such a loving family regardless of the fact that we cannot be together. At least we have Lemon Streusel Tart to fill the gap! A big gap that is.

 

If you are around family or not this year at Mother’s Day, just enjoy being around those you can be around. It’s your day to enjoy and soak up some rays. Being a mother is the toughest job with the greatest reward. Be blessed!

Lemon Streusel Tart

 

Sweet and simple, Lemon Streusel Tart, saves the day on any rainy day. This is the perfect spring dessert packed with wholesome nutrients.

 

 

Prep time:  1 hour

Cook time:  5 hours

Total time:  6 hours

Serves: 6-8

 

 

 

 

 

Ingredients

 

Optional

  • 1 lemons, sliced

 

Instructions

  1. Make Homemade Piecrust and bake. Remove from oven. Lower temperature to 325° F

  2. Juice lemons.

  3. Separate egg yolks into a bowl. Add lemon juice and honey. Whisk until thick.

  4. Use a strainer to pour tart filling into the crust.

  5. Bake for 35 minutes. Allow to cool.

  6. Refrigerate for 5 hours or until firm.

  7. Garnish with lemon wedges or zest.
