This is a simple Italian chicken I have been meaning to post but haven't had a chance to. I thought I would do so now before my bigger post later on. Let's just say it has something to do with Stuffed Mushrooms. And, for the record, not with bacon + blue cheese. If you've been reading the blog, you'll know that's so last week. Every day, I am cooking new meals and hitting the gym to meet the goals I've set this year about boy am I hitting them! This yummy Italian Roasted Chicken is a staple in my house for almost anything from a salad to a lettuce wrap, served over brown rice or quinoa, sometimes even eaten cold; I love this dish. Italian Roasted Chicken
This yummy Italian Roasted Chicken is a staple in my house for almost anything from a salad to a lettuce wrap, served over brown rice or as a side for quinoa.
Prep time: 0 mins
Cook time: 20 mins
Total time: 20 mins
Preheat oven to 350° F.
Season chicken breasts with my homemade seasoning and coat evenly making a nice crust.
Spray baking sheet with coconut oil. Place chicken breasts with space in between each. Bake for 30 minutes.
Remove from oven. Allow to cool.
Serve as desired.
