Hamburger Sliders

Last night, Marylex and I went to see George Lopez live at the Hard Rock Café in City Walk (Universal Studios Night Life). IT WAS HYSTERICAL! She had surprised me with the tickets because I’m leaving tomorrow to Atlanta. There were a few jokes I had heard before but I almost cannot believe we actually got to see him live! We have always loved him. I love his show. I love his comedy. And, love his jokes. He was significantly late—can you tell he’s Hispanic?! LOL.

 

 

 

He didn’t talk about it but he had been tweeting to the very last minute about a golf tournament he attended down the street from my house. Well, Universal is down the street, too, so I guess he was right around the corner the whole time. He was 45 minutes late. Almost a whopping hour! I almost didn’t care because the guy who came out before him to keep us entertained had us cracking up basically peeing in our pants. Still trying to find out who he is so we can watch his comedic performances.

So…I am headed out to the biggest national interpreters/Deaf professionals conference EVER. NAD-RID Conference—National Association of the Deaf and Registry of Interpreters for the Deaf got together to celebrate the RID’s 50th anniversary. I have never been to one of their national conferences and I am very excited just sad that I will be away from home for a significant amount of time. I leave tomorrow night and come back home from ATL next Saturday.

 

Then, on Sunday, I leave for my next interpreting cruise. Therefore, I won’t be back till about two weeks from now—well, only for one day in between my arrival from ATL to being dropped off at the cruise port. Either way, I get to do a lot of socializing, which I love to do BUT I am going to miss my little family terribly. Luckily, they’ll be right here waiting for me when I am back.

 

As for this quick, easy, yummy meal, I made these scrumptious mini Hamburger Sliders for us before the show. We didn’t pair them with anything because we didn’t have any lettuce to wrap them in but that is our go-to usually. I am going to recommend you it them in lettuce for added nutrition and greens. Either way, I hope you enjoy them as much as we did. Although we used Pop and Cook spices, you can use the equivalent of each spice from your cupboard, which would be about a tsp each. We buy these at Walmart. I am not advertising for them but just happened to have fallen in love with the simplicity of this product. Hope you enjoy!

Hamburger Sliders

 

Avoid the fast food, pick up a few ingredients, and make you and your family the most delicious, simple mini Hamburger Sliders.

 

 

Prep time: 10 mins

Cook time: 20 mins

Total time: 30 mins

Serves: 4

 

 

 

 

Ingredients

  • 1 lb grass-fed ground beef

  • 1 tbsp coconut oil

  • 1 basil Pop and Cook cube

  • 1 chili Pop and Cook cube

  • 1 garlic Pop and Cook cube

  • 1 tbsp hamburger seasoning

  • Butter lettuce leaves

Toppings

  • Mustard

  • Ketchup, no sugar added

 

Instructions

  1. Roll up the beef into approximately 6 balls. Flatten them out between the palms of your hand for better cooking.

  2. If not grilling, lightly grease a large pan with coconut oil. Add all 3 spice cubes. Wait for them to melt. Mix them together with the oil to create a sauce for the sliders. If you don’t have Pop and Cook cubes, you can just add the spices to the oil and let them simmer together for a few seconds to get the same effect as the cubes.

  3. Place all of your sliders on the pan to cook in the sauce. Sprinkle the hamburger seasoning over the raw side of the burgers. Flip them and season the other side. Let them cook about 3-5 minutes each side until browned.

  4. Serve each slider wrapped in a lettuce leaf. Top with favorite sauces such as mustard and ketchup (i.e., no sugar added), etc.
