Guava Chocolate Bars

As long as it's still considered summer throughout the world—since it's always summer in Florida anyway— my wife and I will be making sweet summer treats to beat the heat. We enjoyed these Guava Chocolate Bars a few months ago for the first time. One of my best friends, Melissa, was over the house and helped me make this decadent guilt-free tropical treat!


Given that I still have approximately a month and a week left of summer, sharing my recipe for Guava Chocolate Bars and making another batch for us here at home just seemed like the right thing to do. Don'tcha think?



Growing up I always ate what we Cubans call a timba or timbita. That's a slice of white cheese or cream cheese with a slice of guava paste. This is truly one of the most simple and iconic Cuban culture desserts that you'll always find available at a Cuban household (not mine though). At my house you'll find the most delicious guava jam made with frozen fruit pulp by Chiquita Brands. Who knew they were more than just #ChiquitaBanana?! We were so happy to find a wonderful variety of healthy frozen fruit pulp with no added sugar at our local grocery store.


Although I did not create a guava paste, per se, let's get back to the focus and remember that I wasn't trying to make timbas de guayaba y queso here. Let's refocus ourselves back to the incredibly delicious, mouthwatering Guava Chocolate Bars that you can whip up in an hour or maybe even less.



It occurred to me a few months back that I make a lot of stuff with dark chocolate on the blog. From fudge to truffles and more. The most recent time I posted a recipe highlighting chocolate was infused with Raspberry Jam. That instantly sparked an idea for me!


These were not intended for the blog but they were so good that I had to make another batch to photograph and share when the summer arrived.


Since my raspberry infused chocolate truffles we're not made with a filling {but instead mixed in}, I remained longing for a chocolate that resembled the huckleberry cordials my wife and I love to pick up when we are in Montana. I blended the thought of one of my own cultural fruits and the wonder behind the infamous huckleberry cordials made by Helen. Each cordial is handmade by Helen, herself, wrapped in the most beautiful purple foil. My favorite part, personally, is that you will find a sweet little sticker adhered to the bottom of each and every cordial to remind us it was made with love by Helen.





Guava Chocolate Bars


Guava Chocolate Bars are the ultimate summer sweet to beat the heat. Enjoy this decadent guilt-free tropical treat!





Prep time: 20 mins

Cook time: 40 mins

Total time: 1 hour

Yields: 24






  • 1 ½ cup dark chocolate 

  • 2 tbsp raw honey


Guava Jam





  1. Thaw guava pulp.

  2. Spray small pot with coconut oil. Bring guava to a boil. Add stevia. Whisk continuously till it thickens. Remove from heat. Whisk in xanthan gum. Allow to sit for two minutes. Bring back to a boil until the color begins to darken.

  3. Remove from heat. Cover with lid. Allow to cool for 20 minutes.

  4. Set aside.

  5. Break up half the bar of chocolate into chunks. Place in a small glass prep bowl. Microwave for 30-45 seconds. Add honey. Mix in.

  6. Pour in about a tsp of chocolate into each mold. Freeze for 5 minutes.

  7. Remove from freezer. Add about a tsp of guava jam into each mold. Freeze for 10 minutes.

  8. Remove from freezer. Repeat steps two and three. Freeze for 20 minutes.

  9. Store any leftover jam in mason jars. Refrigerate or freeze.

  10. Remove chocolate bars from molds carefully.

  11. Place in a glass container to store in the fridge for snacks
