Guacamole

Once upon a time, when we lived in Miami, I would always bring Guacamole to our church gatherings. I was well known for “Nia’s Famous Guacamole”. That was circa 2012, right around the time that chefNia* was born.

 

 

 

Truth be told, although we sometimes go to City Beautiful Church, we have not become well-established at a church since we moved to Orlando. It’s funny because people think if you are not plugged into a church that you will slowly drift away from the Lord. That is most assuredly the furthest from the truth. We have never been closer to the Lord than right now.

 

This year, when Cinco de Mayo rolled around, we made our annual taco bar fest. I made some grass fed 97% lean ground beef using FlavorGod “Everything Spicy” seasoning—the healthiest and closest to taco & fajita seasoning we’ve ever found—chopped tomatoes, diced red onions, Caramelized Onions, soy cheese shreds, baby spinach, soft corn tortillas, hard shell tacos, and Guacamole {instead of mashed ripe avocado}.

 

 

But, the big but here, the lack of formal gatherings, has let me forget all about my potluck days. Boy, I am telling you this Guacamole is a total home run, the type you want to throw a party just to show off for.

Guacamole

 

$2 extra for a scoop of some cheap guac? Head to the grocery store or local farmer's market and make your own Guacamole right at home, fresher than you have ever tasted before!

 

 

Prep time:  2 mins

Cook time:  3 mins

Total time:  5 mins

Serves: 10-12

 

 

 

 

 

Ingredients

  • 4 avocados, pitted

  • 2 tomatoes, chopped

  • ½ red onion, diced

  • ½ jalapeño pepper, diced

  • Handful of cilantro, roughly chopped

  • 2 tbsp olive oil

  • 1 lime, juiced

  • Sea salt, to taste

 

Instructions

  1. Peel and pit avocados. Chop veggies and cilantro. Juice lime.

  2. Combine ingredients in a medium bowl. Drizzle with olive oil. Sprinkle with salt. Mix in.

  3. Serve.
