Happy Thursday, people! I am bringing you the heavenliest of pineapple recipes on the intranets today: Grilled Pineapple Pork Burgers. You read that right. My wife and I grilled the most juicy slices of ripe pineapple EVER in order to pair with the most luxurious pork burger patties I have made to date. Run-on sentence, much?
Clearly, based on the amount of times the word pineapple shows up in the content of my blog, I have a huge obsession with pineapples. And, I mean, huge. From pineapple shorts to pineapple crop tops, my closet is FULL of pineapple stuff. Now, now, the pineapple items in my kitchen...that is a whole nother story! Cups and platters and everything you can imagine. I just LOVE the yellowness of the yellow. You know since it's my favorite color and all.
Well, let's get down to business! This recipe for Grilled Pineapple Pork Burgers was not one that had to take a lot of thinking. Originally, my wife and I went on our weekly grocery trip to Trader Joe's and planned on strictly following our list. And since that never happens, we ended up with all the ingredients for the absolute best Grilled Pineapple Pork Burgers on the planet.
As we strolled the aisles of the market, we snagged some lean ground pork. We had never seen this there before. And when I say lean, I mean lean! This bad boy only had about 10% fat. That's pretty awesome for some pork burgers we didn't even plan on making. The pineapple was a miracle, by the way, because at this point we were planning on making the pork patties later in the week. We happened to walk back towards produce because we forgot a sack of lemons. Upon crossing the fruits, yet again, this beautiful, bright yellow pineapple made eye contact with me. It was mine for the win!
Pineapples almost never come ripe. This is such a rarity. One of my little kitchen hacks is to bring home an unripe pineapple from the market and put it right on top of the fridge. I kid you not, it will be perfect in one week's time. No more, no less. One whole week.
Anyway...this pineapple from Trader Joe's was absolutely perfect, I tell you! We got home and immediately unpacked the groceries and began making Grilled Pineapple Pork Burgers. This was not on the menu. This was not on the editorial calendar for the blog. This. Was. Not. Planned. Simple as that. Thank me later.

Grilled Pineapple Pork Burgers
Juicy, ripe slices of pineapple grilled to perfection. Lean pork rolled into large patties. Grilled Pineapple Pork Burgers are the greatest summer delight!
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Core and slice pineapple into one inch rounds.
Make a batch of Spicy Mayo. Refrigerate.
Make a batch of Caramelized Onions. Set aside to cool.
In a medium bowl, combine ground pork with seasonings. Roll up burgers into medium size balls. Flatten in the palm of your hand to create a patty.
Grill pineapple slices for 2-3 minutes on each side. Repeat until no slices are left.
Grill each pork patty for 3-5 minutes on each side, you want these made well done. Repeat until no slices are left.
Serve patties topped with a slice of grilled pineapple, a few spoonfuls of Caramelized Onions and drizzled with Spicy Mayo.
