Green Tomato Ratatouille

This is an old recipe but I had to bring onto the blog, finally. Green Tomato Ratatouille is a green dish for the greenest of holidays. You heard that right. St. Patrick’s Day is coming really soon and this is a twist on a classic French dish that hits the spot.

 

 

Ratatouille is a beautifully deconstructed dish composed of round colorful vegetables arranged in layered sliced over a bed of garlic-infused tomato sauce and diced onions. Green Tomato Ratatouille is our family take on this classic and traditional dish.

 

We swapped out the tomato sauce and regular tomatoes for the infamous green tomato. And, of course, added bacon and goat cheese to the mix for a real power kick!

Green Tomato Ratatouille

 

Green Tomato Ratatouille is a beautifully deconstructed dish composed of round colorful vegetables arranged in layered sliced over a bed of garlic-infused olive oil and diced onions.

 

 

Prep time:  10 mins

Cook time:  35 mins

Total time:  45 mins

Serves: 8-10

 

 

 

 

Ingredients

 

Instructions

  1. Preheat oven to 375° F.

  2. Cut all sliced of bacon in half. Slice up veggies thinly. Finely dice vidalia onion. Mince garlic. Crumble goat cheese. Set aside vidalia onion, garlic and goat cheese.

  3. In a large bowl, lightly combine veggies, bacon and seasoning. Set aside.

  4. Drizzle olive oil at the bottom of a deep dish pan. Add vidalia onion. Season with salt. Carefully add sliced veggies in layers: green tomato, zucchini, red onion, and bacon. Top with crumbled goat cheese and a drizzle of oil.

  5. Bake for 30-35 minutes.

  6. Remove from oven. Allow to cool.

  7. Serve.
