When I spend weeks away from home without cooking, whether it be eating pre-cooked meals by yours truly or having food made to order according to my dietary needs, I miss nothing more than being home and cooking for my family. I love the creativity God enlightens me with in the kitchen. It truly is a blessing.
Back when I was in the 300's, pounds that is, I couldn't enter the kitchen without just eating everything in sight without making any sense. I would never make it past the pantry. I knew how to cook and the skill was a strong one but I was infatuated by the thought of eating in secret and in bulk. I wanted to cook because I loved to do so but it was a struggle. I struggled because by the time I was ready to cook, I had eaten all of the ingredients x 5 and had nothing to show for it. Now, I am blessed and humbled to cook creative HEALTHY meals to share and store leftovers.
As for the Greek Burgers, there are no leftovers in sight! That is not to say that you won't—the trick is to double the recipe. They are out of this world. I got the idea from a Pinterest post but those were not nearly as satiating as these were. I made those and they were okay considering I took out all the bad ingredients. Then, I decided I would go about making my very own delectable creations for all you to eat and share with everyone you love. As always, my burgers have no flour, sugar, refined ingredients no garbage in them so you don't have to worry about a single thing.
One thing that I will tell you regarding these phenomenal burgers is that I don't use any cucumber or tzatziki sauce because of my utter disgust for the flavor of cucumbers. I opened my mind to dill so that you all can enjoy these delicious Greek flavors in each bite. Be my guest, cucumber lovers, and slab on some tzatziki sauce on this baby—if you please.
NOW, go to the store, get these ingredients (like I did this afternoon)—if you don't already have them in your fridge and pantry—and make them for your family tonight like I did. You won't regret it for a second! Until next time, my lovelies.
Enjoy the taste of Greece with a taste of an American classic in the mix. These Greek burgers are sure to stand out on your table or at a party. The perfect flavors in every bite!

Total time: 30 mins
Chop tomato. Mince garlic. Chop chives, set aside.
In a food processor, add lamb, feta, lemon juice, tomato, garlic, and herbs. Pulse until smoothly combined. Transfer burger meat to a medium bowl. Add chives and mix by hand. Roll up burgers into medium size balls. Flatten in the palm of your hand to create a patty.
Lightly grease a large pan with oil. Cook two patties at a time 2-3 minutes on each side. Place each burger on a paper towel lined plate. Repeat until no patties are left.
Serve patties over spinach and enjoy!
