Just the other day we invited Meli and Chris over to eat to thank them for helping us with our guest room closet. We made them Garlic Butter Spaghetti & Meatballs and guess what?! They LOVED it. And we did, too. We have made the garlic butter sauce before but never with spaghetti & meatballs. What rock have we been hiding under all this time?
Guest Room Closet
The closet is almost finished! That’s the latest and greatest update. Almost all of the closet is patched up with cedarwood planks. Once we finish that up, the closet rods and shelves go up. BAM! We just cannot wait.
Having friends that will lend a helping hand mean so much especially when you only have a few. We treasure these helpful friends of ours so much. The only rightful thing to do is invite them over for good, healthy food.
Any chance I get while cooking, I’ll throw in some garlic and sherry wine. It’s just a thing. My thing. Of course, to that I always add grass-fed butter. Gosh, that is definitely a thing. And it’s a good thing, too. Delicious. Garlicky, buttery, sherry wine reduction goddess of a thing. This time we added the best gluten-free spaghetti to date. Grabbed at Trader’s, that’s for sure.
When we went to Publix to grab lean ground beef for hamburgers, we found the cutest pre-rolled meatballs. And not the kind full of junk. Just pure 96% lean, 4% fat lean ground beef meatballs. Yas queen. My wife and I looked each other straight in the eye and said, “YAS QUEEN”, before putting it in the cart. We don’t shop there as often as we shop at Trader Joe’s so it was cool to see they offer healthy options.
Every time we have made meatballs before this, we just buy the meat and roll them ourselves. You can do either if your store has pre-rolled healthy options. I had always seen the pre-rolled ones full of breadcrumbs and other unnecessary ingredients. If you find some, I suggest you snatch them because rolling a bunch of these puppies is tedious. At least to me.
Garlic Butter Spaghetti & Meatballs
Garlicky, buttery, sherry wine reduction goddess of a thing, this decadent dish of gluten-free Garlic Butter Spaghetti & Meatballs will fancy anyone.
Prep time: 15 mins
Cook time: 45 mins
Total time: 1 hour
In a large bowl, mix together beef and ½ tbsp of seasoning with your hands. Add salt and pepper, if desired. Roll into little balls.
Lightly grease skillet with coconut oil. Cook 4 meatballs at a time for about 2 to 3 minutes on each side or until browned. Remove onto a paper-towel lined plate.
Bring a pot of water to boil. Add spaghetti. Cook for 12-15 minutes or until al dente. Drain with a colander. Allow to cool.
In the same pot, add minced garlic, butter, and wine. When bubbling, give a whirl and add pasta back in. Add in the meatballs one by one as you slowly whirl the pasta together. Garnish with parmesan cheese, if desired.
