Hello blogosphere! I have been gone for almost a month now. I hate when I leave for such a long period of time without announcing it. I get so wrapped up in the packing, planning, and missing of the family prior to my actual departure on a trip that I forget to blog. As always, I apologize for that. I do really mean it, though. First creation I made when I got home was this Fresh Crab Salad as a little reminder of Hawaii. I miss it but I missed the comfort of my own home and family more.
Sometimes, life throws curveballs at you even if it's a positive one. Completely out of time, I put the blog to the bottom of my to do list. I look forward to a day where I have less and less to worry about doing my blog like it's a chore but to a day where I can write it because I have plenty of time on my watch to do so. At this point, I am just happy to be home and relaxing before my birthday.
In the three weeks or so that I have been traveling, I have learned a few things. I'll start off with the first thing I cannot get off my mind. God is way too good to me! He really has blessed me with amazing dreams come true in the year 2014. I have to go back to a list I wrote on Instagram in the beginning of the year to blow my own mind on this things God can do with someone in a year. I wanted to travel, lose more weight, get healthier, get closer to Him, etc. Almost assuredly, I can say that the Lord has done those things for me and more. I am blown away, I am emotional and I am honored. He is using me for His Kingdom and He is showing me the world.
So if you're wondering where I went...I will tell you! My trip started in Orlando, my home of course, and I flew over to Salt Lake City. I was in SLC for just an afternoon and headed over to Seattle. I spent the night there and then I took a 6 hour shuttle bus to Vancouver, BC. I already love Canada but had only had a chance to see the East coast of it. The drive was nice and nerve-wrecking cause I was running past my schedule. Once I got to the cruise terminal, I jumped on the ship and met my team interpreter. She was absolutely amazing! We worked so well together, we laughed so much, and made some damn good memories with our clients. This experience has been once in a lifetime and I can only thank God for it.
Fresh Crab Salad
Instead of the 20 ingredient salads at the grocery store, make Fresh Crab Salad for your week instead! Just a few simple ingredients for this delicious healthy treat.
Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
With your hands, separate the chunks of both fresh and imitation crab. Toss into a bowl with carrots. Set aside.
Spiralize onion. Use ¼ for the salad, put the rest away for other meals. Chop chives. Dice celery.
Mix veggies, crab and mayonnaise in a bowl until combined. Add sea salt, if desired.
Serve into mason jars or tupperware.
