Here is my first recipe ever: Dijon Maple Chicken Stacker. Well, not my first EVER but my first on here. It's the beginning of a new journey and I am taking the plunge.
When my girlfriend and I first made this dish, we had no light in the kitchen, hence the bad lighting. I need to prepare myself more for taking better pictures if I am going to be blogging. It might take me some time to get myself together but I will come around.
Being that it was our first time cooking with polenta, we weren't sure where to go with it. We hit it out of the ballpark with Dijon Maple Chicken Stacker. The size of the polenta and the mozzarella slices were perfect for this dish. If your chicken is too big, just chop it into pieces in order to make your stack perfect.
Dijon Maple Chicken Stacker
Our sweet and tangy Dijon Maple Chicken Stacker dish is chock full of protein, loaded with flavor and jam packed with color.
Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
Preheat oven to 350° F
Slice polenta and mozzarella into thin rounds. Cut chicken breasts about 3 inches.
Spray pan with oil. Sauté chicken until browned. Add mustard + maple syrup. Allow sauce to thicken.
Remove from heat.
Spray cookie sheet with oil. Layer your stacks with polenta, mozzarella & chicken.
Bake for 15 minutes.
Serve with a side of spinach.
