Creamy Chickpea Stew

Nohely is in town! Let’s all make a sound. Haha, I’m corny like that. I love to write, I am sure you all know. I, also, used to write rhymes when I was younger. It’s funny to think that I used to rap my rhymes to my friends many moons ago. I loved writing about everything I felt. I wanted to share it with the world. The irony of that is that I am now doing the exact same thing right now. Who would have known then that I could hold a blog together for this long!

 

 

I remember way back before Facebook, Instagram, Twitter and mySpace, there was Livejournal. That was my blog. I shared my childhood feelings and I shared my Photoshop work, as well. I would fill custom requests and I was just 12! I kept blogging on there as lilolovesjesus throughout all of high school. I changed it later to mintystar but I went back a few years ago to check it out and most of the posts were gone. I hope with having restored my posts here on Essentially Healed, I can keep the memories long-lasting forever.

 

If you think about it, and I know I have said this before, but this is a legacy. For our children, for our niece and nephew, for our cousins and everyone in our life that we want to share life with. We are doing life together, thanks to Jesus for this blog.

Creamy Chickpea Stew

 

Sometimes garbanzo beans can be boring. If you make this Creamy Chickpea Stew, you are sure to be blown away by the uncommon, refreshing flavors.

 

 

Prep time: 10 mins

Cook time: 20 mins

Total time: 30 mins

Serves: 4

 

 

 

 

Ingredients

 

Instructions

  1. Mince garlic. Chop up veggies. Drain chickpeas.

  2. In a small pot, add olive oil. Heat on medium. Add veggies, chickpeas & herbs. Stir-fry until lightly browned.

  3. Remove from heat. Serve chick peas in a bowl. Set aside.

  4. Add butter to the same pot. When melted, add cream. Allow to lightly boil. Add all other ingredients. Whisk until smooth. Throw chick peas into the pot. Throw in salt. Stir until evenly combined.

  5. Serve in a bowl or mug.
