No blog post could do justice to the tropical, Hawaiian flavors this brings to the table. I have never experimented with making any type of chicken fingers or even nuggets throughout the time of my newfound health in the last three years. THIS is love and THIS is summer food. I want to take advantage the rest of this month just before September hits in order to post about all the summer foods I have been dreaming of and journaling about until I come up with the right combinations of everything healthy and everything flavorful to come to you with many more posts for you all, like this.

I had a pin on one of my secret Pinterest boards I have for cooking ideas for quite sometime now that inspired me to make this dish. The picture was of a crispy chicken strip dipped into a yellowish, creamy sauce with green specs. It led to no website but it was one of those images of food that circles the internet faster than you can say cheese pops and got pinned onto every food board instantly upon it coming up in one's feed. My take on it? To make it what I dreamt of in a healthy fashion without using any refined sugars, wheat, or nasty junk that could have possibly been in the ingredients of the meal in the picture that lingered on that secret Pinterest board for at least over a year.
I made these last night with the idea in mind that I would have leftovers but honey, our house guests, and I devoured these so quickly I couldn't even catch enough dipping pictures. I always loved chicken fingers just as any child growing up in America would. I also loved dipping sauces: every color, every texture, every single damn way. I adored the sweet ones from the ones who were sort of creamy, the ones that were chunky, and the jam-like almost jelly type. And, this creamy mango and cilantro dipping sauce for the coconut chicken fingers is simply to die for. Perfect summer food. Perfect tropical, Hawaiian inspired dish for this Floridian headed out to Hawaii.
Coconut Chicken Fingers + Mango Dipping Sauce
Healthy Coconut Chicken Fingers with a sweet and savory Mango Dipping Sauce to dip these juicy and crispy babies for a summery treat.
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Whisk egg in a small bowl.
In a bowl, mix together dry ingredients.
Set your different plates in a line from left to right: chicken tenderloins, egg, coconut breading, and empty plate to place your coconut crusted chicken on.
Dip each chicken tenderloin in egg and then roll around in the coconut breading. Repeat this till all your chicken is coated and ready to fry.
Add oil to small pan and heat to medium. Fry 3 chicken tenderloins at a time. Set them aside as they are finished cooking on a paper towel lined plate.
While you cook your chicken, add all sauce ingredients in the food processor and pulse until creamy. Serve a few tablespoons in four small glass or ceramic bowls for dipping.
Allow coconut chicken fingers to cool.
Serve a few coconut chicken fingers with a side of mango dipping sauce for each.
