Cinnamon Raisin French Toast

July 10, 2016

For the longest time, I have been craving French toast. Mmm! And I don’t mean the frozen kind that comes prepackaged {yuck!}. I’m talking about that fresh to death, homemade by mom, or chefNia, French toast. I knew it was a special day in the kitchen with my mom when she pulled out a loaf of cinnamon raisin bread, eggs, cinnamon and pure maple syrup. Oh yeah, baby!

I’ll never forget the first time I learned to make Cinnamon Raisin French Toast. Clearly, it had a special mom touch compared to the regular, plain French toast people know and love. This craving of mine has been lingering in the pit of my stomach for months on end.

I searched and searched for the perfect gluten-free cinnamon raisin bread with no added refined sugar and just could not find any for the life of me. After making a major switch from huge corporate supermarkets to our local Dr. Phillips Trader Joe’s, we’ve been able to find lots of products that we have been looking for and couldn’t find in mainstream stores. Finally, I found the perfect loaf of bread to make my mom’s legendary Cinnamon Raisin French Toast.

As soon as I brought my first loaf home, I had an appointment in the kitchen with my loaf of bread. Maybe it’s the fact that it’s been a long time or maybe it’s the hack that my version is much healthier, but these slices of Cinnamon Raisin French Toast were the best I’ve ever had! I could have kept them all to myself but I am too generous for that. Here is a recipe that I hope you take down in the books forever.
