When you coat that love of pineapples in chocolate, you've got me in the palm of your hand. Thanks to the love of these two things, I am bringing to you the easiest and most delicious summer snack of all time: Chocolate Covered Pineapple Chips.
What the what? Chocolate Covered Pineapple Chips, yo?! Yes, you totally read and saw that correctly. I mean look at the chocolatey, dried pineapple goodness in the picture. I know, I am mesmerized as well. All that is missing is to dust them in edible gold. Hmm...I am onto something!
One of the things you are wondering are how this possibly could be easy to make. I am here to salvage those little thoughts that are running into a wall. Well, you crazy peeps, all you've got to do is go to the dried fruit and nuts aisle in your local grocery store or supermarket and crouch down to look at the bottom shelf. YES! You have to crouch down, people. This is where they hide the no sugar added pineapple chips everywhere. From Trader Joe's to Publix or Winn-Dixie and Walmart, they all do this! Now that we have the only problem in the way solved, let's hit the kitchen and make these incredibly delicious and sweet Chocolate Covered Pineapple Chips. With just two ingredients, there is no excuse not to make these.
Chocolate Covered Pineapple Chips
Thanks to the love of pineapple & chocolate, I bring the most delicious, simple summer snack of all time: Chocolate Covered Pineapple Chips.
Prep time: 5 mins
Cook time: 20 mins
Total time: 25 mins
In a small glass bowl, add chocolate chunks. Microwave in 30 second intervals, stirring each time until creamy.
Line a baking sheet with parchment paper.
Dip each pineapple chip about half way into the melted dark chocolate. Place on the parchment paper-lined baking sheet. Repeat until you have no chips left.
Refrigerate for 10-15 minutes or until the chocolate is completely solidified.
