There are days that the thought of not having something sweet and delicious to munch on in the kitchen are just treacherous. Days like those are hard to get through. Many times though, I have forgotten that I made something for a holiday or some other event of sorts, maybe even some random idea to curate something sweet for the blog. These itty-bitty Chocolate Coconut Bounty Bites I once longed for are most certainly lingering around in places I don’t know because it is quite possible my wife moved them and hid them from me. Like these little puppies I'm posting about today.
For July 4th, I told you all about how we had company over. I made a lot of little treats with one of our little cousins. We devoured just about everything and threw away nothing. Little did I know that these Chocolate Coconut Bounty Bites we're hiding in my freezer! It just about made my day when I went to make a green smoothie and noticed these hiding in the back in a pretty little Tupperware. If I remember exactly I might have even jumped for joy, don't tell anyone. I might add that no green smoothie was made on that day. LOL.
These little babies are just so good! They've got everything you need on a moment where all you need is a little bit of natural sugar to keep you going. They were actually something we came up with last minute because we had leftover dark chocolate from all the other July 4th activities and goodies we made. Even if you don't have any leftover dark chocolate from any cooking project, this is a pretty good reason to go pick up some dark chocolate or make some at home.
The recipe is as easy as 1-2-3 and the rest is history! I am wishing and dreaming right now I had one of these in my mouth; I'll reach for a Clifbar instead since we are still on the road. Praying for you all and hope you have a great night. Pray for our safe travels, please and thanks.
Chocolate Coconut Bounty Bites
Cubes of pure Chocolate Coconut Bounty Bites goodness ready at your disposal for any event, party, get together or just for your dismay.
Prep time: 20 mins
Cook time: 20 mins
Total time: 40 mins
1 cup coconut butter*
1 cup dark chocolate
Pack each ice cube slot with coconut butter. Freeze for 10 minutes.
Remove from freezer. Release the bounty bites from the tray. Place on a tray.
In a glass bowl, melt chocolate in 30 second intervals while mixing in between. Once melted, push toothpicks through each bounty bite about half way. Dip each bite into chocolate. Place back on tray. When all bounty bites are dipped in chocolate, place back into the freezer for 5-10 minutes.
Remove from freezer.
