Lots of ideas on the back burner and lots of time passing me by without doing anything about it. This week I have really put my all into making these ideas come to life in my kitchen. Now, I get to bring this to your dining table. Well almost. I'm on your computer screen or your phone so now I'm practically in your head with this recipe. I am just head over heels for this one! I never get to sample my recipes with more than just honey and I but I have guests over and they absolutely loved it. From the smell of the juices coming from the oven to the melting cheese all over the pan and somehow ending up wrapped around my fingers, this Chicken Cordon Bleu is the bomb and has no flour at all whatsoever.
Chicken Cordon Bleu has been a dish I have loved for a long time. My grandmother used to make her own version for my cousin and I when we were little. I wonder if she remembers? I'll have to ask. It was absolutely decadent. With the crispy breadcrumbs over the soft, juicy chicken stuffed with salty ham and melty, bitter Swiss cheese. As a true Cuban always does, she served this dish over a bed of warm, sticky white rice. Now that I have basically cut off my relationship with white rice, I replaced it with quinoa and the occasional bowl of perfect brown rice. I do miss white rice but my mother in law just gave me a rice maker to use for my quinoa so HOORAY!
In this dish, I got rid of the breadcrumbs as well as the rice and served this over a bed of fluffy quinoa. I used nitrate and nitrite free ham by Applegate Farms and fresh slices of baby Swiss cheese to stuff the chicken breasts and roll them up into a ball of heaven cordon bleu. My favorite part of the whole dish has to be the ooey gooey liquidy Swiss cheese goodness that pours out of the sides melting over the ends of the chicken breast and the quinoa. Point is....this recipe is to die for!

Chicken Cordon Bleu
The ooey gooey cheese goodness that pours out of the sides melting over the ends of the chicken breast and the ham is what makes this the perfect Chicken Cordon Bleu.
Prep time: 10 mins
Cook time: 35 mins
Total time: 45 mins
6 chicken tenderloins
¼ cup ham, sliced
¼ cup swiss cheese
Drizzle of olive oil
Preheat oven to 350° F.
Drizzle olive oil on a baking sheet.
Layer sliced of ham and swiss on each tenderloin. Roll up and seal with toothpick. Place on baking sheet. Bake for 35 minutes.
Remove from oven. Allow to cool.
Serve with quinoa.
