Carrot Cake Energy Bites

I did it again, guys. I hit it out of the ballpark. We followed along with the base recipe of our favorite Banana Nut Protein Bars in order to come up with the most amazing birthday treat known to man: Carrot Cake Energy Bites! With freshly grated carrots, golden raisins and a pinch of cinnamon, our chewy and heavenly Carrot Cake Energy Bites are nothing short of the real thing.

 

 

I love everything about these little Carrot Cake Energy Bites because they’re so easy to take with you on-the-go. One of my favorite meals to eat these for is my post-workout. Although these can be kept at room temperature, thanks to our lovely Weimaraner, Bentley Mac, we refrigerate everything—even our sponge. That wasn’t a joke. That’s for sure.

 

We have grown accustomed to eating one or two Carrot Cake Energy Bites cold right out of the fridge, possibly rolled in toasted unsweetened shredded coconut flakes. Yum! It’s seriously the best snack to have after you killed your workout. Even better when you murdered it! Oh yeah girl, you deserve it. Leave all that sweat on the floor and then come home deserving of some heavenly Carrot Cake Energy Bites. Pun intended.

 

 

And, about the sponge, that’s for real a true story. Our lovely four-year-old canine son has eaten more sponges in his short life time than I can count on my two hands and two feet. I know, that’s a lot, right? Before you come blaming us for negligence, you have no idea how smart this boy is. And there are no other two mothers in the world who could give him the undivided attention that we do. He’s capable of opening a cabinet and tall enough to climb onto the counter. His neck is long enough to reach behind the sink and his arms stretch farther than you can begin to imagine.

 

 

The sponges always come back but they come back regurgitated and it’s disgusting. Ew. The doctor would laugh every single time we would call about an eaten sponge freaking out, as the two scared mothers that we are, because he found it funny. He always says Bentley has a stomach of steel and a sponge can’t hurt him. We didn’t care. A sponge is not for boys to eat. It’s not a snack. Neither are our Carrot Cake Energy Bites, unless you omit the raisins for a safe doggie treat.

 

 

Well, the last time was just that. The last time. My wife, bless her heart, decided to put the sponge in the fridge because that is one place he cannot open the door to. It’s been the most amazing invention. The sponge actually smells better, lasts longer, is consistently disinfected and NEVER GETS EATEN! And, you know what else never gets eaten by our son? Our Carrot Cake Energy Bites. Yas queen.

Carrot Cake Energy Bites

 

With freshly grated carrots, golden raisins and a pinch of cinnamon, our chewy and heavenly Carrot Cake Energy Bites are nothing short of the real thing.

 

 

Prep time:  2 mins

Cook time:  3 mins

Total time:  5 mins

Yields: 12-16

 

 

 

 

 

Ingredients

 

Instructions

  1. Remove pit from dates or buy pre-pitted. Soak in warm water for a few minutes.

  2. Pulse ingredients together in the food processor until a ball forms.

  3. Line a deep-dish pan with wax paper. Push protein bar dough into the pan. Refrigerate for 20 minutes.

  4. Remove and cut into bars. Wrap in wax paper. Store in the fridge for up to 7 days.
