Caramelized Onions

June 21, 2016

Everybody say yay for new friends! It is so good to connect with our brothers and sisters in Christ. Mostly sisters because we have an immediate womanly bond. Speaking of, there is a nice friend of my wife’s from high school that recently lost to Central Florida. Her and her partner have similar interests like us. They have a dog and they love to travel. Win – win, right?

So we have been making dinner party plans for quite a long time via text and we just always seem to cancel on each other—bummer. Last week, they invited us over to their house {not for dinner, just to chill} and we had a nice time. We knew that we had to return the favor and invite them over for a dinner party at our place. They came over just the next day! I made an amazing meal that I will share with you later this month. It all started with Caramelized Onions, the base of every fine dish.

As a young child watching my grandmother cook in the kitchen, Caramelized Onions went in every recipe or as a garnish on top of any meal she served. She would whip them up quickly and I never knew how.

I remember the first time she taught me to cut an onion. And as my eyes cried tears of confusion, I wonder how they got so soft and tender from there. Once she taught me the simplicity of Caramelized Onions, I never looked at an onion the same again. I fell in love with the kitchen as a child and the versatility of this little addition of pure goodness has long time been one of my favorites. You could make it just a tad bit sweet or a hint of savory, either way they come out perfect. For us, it is fun to play around with flavors in the kitchen and tweaking the recipe to my Caramelized Onions is certainly one of them.
