BLT Salad

Clearly, I am on a roll lately with my summer meals. This is the time of year where I can use all my favorite fruits and veggies to really let your body shine from the inside out. Now, regarding this salad, it tastes like the good old days sitting on the beach with my cousin, Lala, eating a BLT sandwich sub from Publix on South Beach with the wind blowing my cigarette away and filling my bottle of beer with sand. Good days when I did bad things and didn't care about me or my body.

 

 

On a beautiful sunny day like today, I get to eat this delicious BLT Salad right before I go out to enjoy the breeze with a good run. I've been running more these days. Basically running for my life. I love it just get discouraged when I can't meet a certain goal cause my body isn't ready to push through to that level yet. Lately, I have continued to notice change all around my body from my face down to my toes. Everything is just changing. I have to embrace the change and understand the process. It's slow and tedious but well worth it. This keeps me pushing forward to the next day, to the next meal, to the next run, or the next workout.

 

This BLT Salad has all you can ask for: bacon, lettuce, tomato, and dressing! No complicated ingredients you can't find in your fridge or pantry. No going out to the store in order to make the recipe. Open your fridge and voila! It's time to make a juicy BLT Salad for the whole family to enjoy. It's so easy to put together that you can even double the recipe to make a second bowl to take to a barbecue or summer pool party. It's time to show off your summer body in that bathing suit you've been waiting to fit into since 2010 and you can finally do so while munching on this salad!

 

Flavors of crunchy warm bacon with juicy, ripe tomatoes, served over the crispy, fresh romaine lettuce topped with the zesty goodness of this lime and honey vinaigrette will just blow your mind! Sitting outside taking in the ambiance of summer while eating this is the perfect afternoon treat. I can see myself making this year round and packing it for my meals, which leads me to address meal prepping needs! This salad is the perfect 'to-go' meal for your summer lunch. Pack this up nicely in a Tupperware container and serve the dressing in a small mason jar, unless you don't mind your salad tossed in dressing already. Put these two in your lunch box with a bottle of water and you are ready to hit the road, Jack!

BLT Salad

Prep time: 5 mins

Cook time: 15 mins

Total time: 20 mins

Serves: 6

 

 

 

 

Ingredients

  • 1 head of romaine

  • 6 strips turkey bacon, diced

  • 2 tomatoes, chopped

 

Dressing

 

Instructions

  1. Chop lettuce and tomatoes. Dice bacon.

  2. In a pan with no oil, cook the bacon bits until crispy.

  3. Throw in bacon, lettuce and tomato into a large bowl. Toss.

  4. Whisk together the dressing ingredients in a small bowl until well combined.

  5. Drizzle dressing over salad. Toss until covered.

  6. Serve.
