BBQ Roasted Veggies

And, the story continues! I finally had the nerve to ask the homeowners association (HOA) about the plans for my backyard. I was practically devastated when they told me they had yet to get approval from the board. Be that as it may, we are renting from the owner of the property until we find a property of our own to purchase.

 

 

With that in mind, we do not have any say in the board meetings or in any of these plans, for that matter. This has left us both crushed! We have had so many dreams of what we can do in that backyard in order to entertain guests and family. Please do not even get me started on the garden decor I’ve hoarded in the last few months, having had the expectation for the landscaping to be completed by now.

 

 

Lesson of the Day: do not expect anything! We are people of habit. We expect life to fall into place because we trust God. We just expect way too much. We expect the business deal to go through. We expect to pass all classes in school. We expect family to love us. We expect church to accept us. We expect the world to understand. But, why? There might not be an answer to that question but there definitely is a way to stop expecting by realizing that expectation is failure.

BBQ Roasted Veggies

 

Sometimes a healthy barbecue can be difficult but with BBQ Roasted Veggies, the party is on all the way!

 

 

 

 

Prep time: 3 mins

Cook time: 15 mins

Total time: 18 mins

Serves: 4

 

 

 

Ingredients

 

Instructions

  1. Preheat oven to 375° F.

  2. Chop veggies into florets. Set aside.

  3. Spray a small deep dish pan with oil.

  4. In a small glass bowl, whisk together liquid ingredients while slowly adding seasoning.

  5. Throw veggies into pan.

  6. Using a basting brush, coat the veggies with marinade completely.

  7. Bake for 15 minutes.

  8. Serve as a side.
