Happy birthday, honey! Today is Marylex's birthday and we are celebrating. From me actually being home and able to cook fabulous Banana Boats for each of us to sing happy birthday to, birthday girl scavenger hunt throughout the house and in the patio for gifts galore, dinner at Outback, and movies at home. It was a great ol' time.

 

I love birthdays and I love prepping for them! I enjoy everything from creating gifts myself and packaging them up in beautiful wrapping with gorgeous note cards or name tags that I buy from different places. I kind of collect all this stuff just for birthdays and holidays. The theme for her birthday was brown, black and gold. Hence, Banana Boats for each of us.

 

This is an easy, peasy, lemon, squeezy dish. I put it together in mere minutes. Just whip up the peanut butter, unsweetened shredded coconut flakes, chocolate vegan Shakeology protein powder, and crunchy walnut halves and stuff them babies to the prim. When they came out of the oven, I topped them with fresh, organic ground cinnamon for an extra delicious kick. Well worth it. Every bite was decadent and scrumptious.

Banana Boats

 

Birthday Banana Boats ready to eat and completely for free. Free of wheat and sugar and refined nonsense. Just pure and sweet Banana Boat bliss.

 

 

 

 

Prep time: 5 mins

Cook time: 20 mins

Total time: 25 mins

Serves: 4

 

 

 

 

Ingredients

 

Instructions

  1. Preheat oven to 400° F.

  2. Using a pairing knife, slice each of the bananas down the middle. Set aside.

  3. In a small glass bowl, mix together the peanut butter, protein powder, coconut, and walnuts until thoroughly combined. Scoop the mix into the slit of the bananas.

  4. Lightly grease a deep dish pan with coconut oil. Line up the bananas tightly in the deep dish. Bake in the oven for 20 minutes.

  5. Remove from the oven. Allow to cool. Top with ground cinnamon.

  6. Serve.
