Many a times, I have made fresh and homemade applesauce—delicious, I know. Somehow, I have come to forget what I can do with the apples before they become applesauce. Another one of Herlis’ ideas, was to make Baked Apples. Mmm…the sweet taste of apples right before I blend them into creamy, spicy applesauce. I haven’t worked with apples since last year around Fall. I remember how delicious the apples can be and how versatile, too.
I knew exactly what I was going to make from the moment she mentioned the words “Baked Apples”. They are yummy and juicy and full of life! I always tend to snack on them straight from the pan as I’m boiling them to make applesauce. They are basically baked but not, you see?
Because Pinterest is a huge part of our lives, Herlis began to search for ideas of Baked Apples. I kept telling her not to worry about it because I would definitely come up with a great recipe we would all love. When she found a few ideas to make them in the microwave, a lightbulb went off in my head and I told her to stop the search for a good recipe. Read below to see what we came up with…Baked Apples that are not really baked at all.
Baked Apples in the microwave! No complicated tasks in the oven, just a quick nuke in the micro and BAM.

Cook time: 5 mins
Total time: 10 mins
Peel and core apples. Thinly slice them. Throw into a microwave safe bowl. Sprinkle in cinnamon and stevia. Combine until evenly coated. Set aside.
In a small glass bowl, heat up the coconut oil for 30 seconds. Remove from microwave.
Add oil to the apples. Combine until evenly coated. Cover. Microwave for 5 minutes. Remove from microwave.
Stir and serve.
