To celebrate, I made a fun and easy snack that kids or adults can both enjoy. Apple Cake Rings are like small pancakes packed with a wholesome punch. I even served them with a side of my famous Nia Syrup to dip them in.

Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Core and slice apples. Pat dry apples with a paper towel.
In a small bowl, whisk together wet and dry ingredients.
Spray pan with coconut oil. Dip each slice into the batter and onto the pan. Cook for 2 minutes on each side. Serve onto a plate.
Dust with stevia and cinnamon.
Make a batch of Nia Syrup. Serve with cake rings to dip.
