With Herlis in town, it’s not too easy to get her to eat veggies. I guess when you involve kids in the kitchen while cooking it can make everything much funner. She was definitely willing to eat a little bit of hummus with red peppers and some pretzels from our veggie tray being that it was presented in the shape of an American flag. This was a definite plus!
It has been a hard and tough week thus far. I was very proud of us to end the week with her eating some vegetables and fruits willingly. I can tell you with all honesty that this put the biggest smile on my face, ever. I think for even the pickiest kids this week American Flag Veggie Tray is certainly a fun treat!
There are a few varieties on Pinterest using blue tortilla chips instead of blueberries. Feel free to do that if you are already using blueberries in something else. We thought blue tortilla chips was too heavy considering all the different finger foods we have on the spread. What are you making this Fourth of July?

Using a square or rectangle tray, create red stripes with pepper slices. In the top left hand corner of your tray, add berries. Carefully add hummus in between your red stripes. Refrigerate.
Serve with gluten-free pretzels.
