This week we have the oldest cousin, Cathy, staying with us. We had a blast with the younger ones, that is for sure! There were differences in quality time with each of them, most definitely. Cathy can take care of Bentley and handle him on a leash. SCORE! It is extremely hard for anyone to handle him on a leash because he’s big. Weimaraners have so much stamina and energy.
Bentley can run forever! The only problem is that he hates the heat. HA! I think it has more to do with the ground being hot on his paws. Either way, he is SO lazy. He makes you want to be with him rolling around all day! We love him so much. It has been so nice to see all the girls, Cathy; Nohely; Herlis, love on him so much. They practically have fallen in love with him. I mean, who wouldn’t?
Having a family oriented dog is so important to us. More so, for us it is important that our family members from either side can come over and enjoy time with him as well as vice versa. He even gets along with everyone’s dog. Thank God! I do wish we made more time to take him to the bark park because he loves getting in the lake at Lake Baldwin.
Onto the ridiculous gluten-free pizza that I made with Cathy this week. Are you ready for this shit?! It’s so out of control that I can’t stand it. I know I say that a lot about food that we make here at home; this is solely because I actually still get surprised to recreate foods that were disgusting, yet once loved. Of course, I will be honest, when I re-create a meal, it doesn’t always taste the same at all. It tastes real and even better!!
I really have tried a million recipes to make the perfect gluten-free and healthy, wholesome pizza crust from Pinterest as well as created by me. Nothing has ever worked. I have used cauliflower and almond meal and coconut flour. When I’m telling you nothing worked, I mean nothing worked at all. I didn’t even expect this crust to work out. When I baked it and saw the perfection we created, I got the camera out to get top notch footage. Now, if you’ll excuse me, I’m off to grab a slice, you should too.
Forget Pizza Hut & Papa John's tonight! This Hawaiian Pizza will have you head over heels. Once you go healthy, you never go back.
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Preheat oven to 350° F.
Pulse crust ingredients in food processor.
Spray pizza pan with coconut oil. Spread out crust dough onto pan. Using a spatula, push it all the way to the edges evenly.
Bake for 15-20 minutes.
Warm your frozen pineapple in the microwave for 1-3 minutes. Allow to cool. Cut into smaller chunks.
Remove pizza crust from the oven.
Spread marinara sauce on your crust. Leave a little bit of crust without sauce around the edges for that crunchy bite!
Top pizza with ½ a bag of mozzarella. Add cubed ham + pineapple. Top with the other ½ bag of mozzarella. Sprinkle seasoning over pizza.
Bake for 10-15 minutes.
Remove pizza from oven. Allow to cool.
Using pizza cutter, cut pizza into eight or more slices.
