Watermelon Slushie

July 17, 2016

Last week, we made the most amazing Watermelon Margaritas here on the blog. They were so good! It was something we had never thought about and we were sure missing out on.

In the spur of the moment, we decided to pick up my niece and nephew to spend a week with us before we leave for phase two of The Legendary Road Trip. Of course, we cannot share our delicious Watermelon Margaritas with them so we knew we could come up with something good to share with them. Insert Watermelon Slushie here. I don’t know what was easier, this recipe or the recipe for Watermelon Margaritas. Okay, fine. I do know. The winner would have to be our delicious, kid-approved Watermelon Slushie.

After an all-day adventure with the kids at Crayola World and a child-induced sugar rush at the M&M’s Store, we came home exhausted and thirsty. The adults drank Watermelon Margaritas while we whipped up a batch of slushies with some of the fresh watermelon juice that was leftover. I cannot even begin to express how simple this recipe is.

As we served Watermelon Slushie into their little cups {that they chose} with pretty lime green spoons, I realized that we could make this with our little red Hamilton Beach on-the-go blender while we drive around the world this summer. We have a plug that connects to the car charger adapter for a 120V switch. Last year, we would stop at local grocery stores or markets to pick up fresh produce and greens.

We would use either Bai5 or filtered water as the liquid base and we’d make smoothies in the car as we went. And I mean literally while driving. It was awesome. One time, we were pumping gas and the car was off so I went to the side of the gas station building to plug up and make a pineapple kale smoothie. Best freaking smoothie ever dude! Plus, the blender is also a to-go cup so it’s a win – win all the way around.

Now, I just can’t wait for it to be a Watermelon Slushie on the road.
